Exam Trilogy #3: Cottage Pie Recipe

The final installment of the Exam Trilogy is a recipe. During exams, no one wants to cook and especially when you have an exam at 7, it can be hard to make time to cook dinner. A recipe like Cottage Pie is great because it has the comfort food element, the winter, stick-to-your-bones element and you can just stick some in the microwave for a quick dinner without the food going soggy. I also used minced turkey to make the recipe slightly healthier. If you you want to improve on that you could use a cauliflower mash instead of potatoes. I made mine with a friend to split the food as well as to take a "social" break from studying. 

Ingredients:
- 1 medium onion, diced
- 1 large carrot, cut into rough chunks
- 450 g. minced turkey pre-seasoned (if you're a student like me without a lot of spices and herbs this is great but another alternative is to buy a packet of shepherd's pie seasoning)
- 1 tablespoon of all-purpose flour
- 1 tablespoon ketchup 
- 300 mL beef stock
- 800 g. potatoes, peeled and quartered
- 2 tablespoons butter
- 50 mL milk
- salt and pepper, to taste

Directions:
Preheat the oven for 400 degrees F. 

Get a large pot of water going on the stove for the potatoes.

Chop vegetables and add to a saucepan with oil (olive or otherwise). Let cook for about 5 minutes and then add mince. While stirring break up the mince (to avoid that brain-like appearance) and cook until browned. Add stock and seasoning, and bring to a boil. Reduce the heat and let cook for 10-15 minutes.

Quarter potatoes and add to the boiling water for 15-20 minutes, until they are soft enough to mash. Drain water and mash with butter and milk until fluffy and creamy (at summer camp I was exposed to mash potatoes from a box and as gross as that sounds nothing comes as creamy as those "potatoes"). 

In a corningware dish, pour the mince and either dollop or pipe the mash the mash on top. If you haven't piped, used a fork to add some texture to the top of the mash potatoes which will brown in the oven. Bake in the oven for 20-25 minutes. 

And enjoy not having to cook for the rest of the week! (I'm kidding don't keep it for longer than 4 days, it isn't safe)
